Description
PERFECTUM – Unfiltered & Organic Novello Extra Virgin Olive Oil is a monocultivar Nocellara del Belice. It is obtained with very green firsts olives of the season, harvested by hand from biological cultivation and pressed few hours later. It is a very firstfruits of the oil mill celebrated in October-November period.
This just-pressed new oil appears thick and shiny green with golden reflections. It contains tiny particles of olives with a special flavour: intense and good smelling, full of many fragrances.
PERFECTUM – Unfiltered & Organic Novello is an exclusive selection for the first time publicly available in a limited edition of few bottles and tins. A must for italian gastronomic tradition lovers.
It is excellent not only for the flavour but also for a good health. After about three months it results less spicy but keeps its quality even with maturation: thanks to low acidity and high level of polyphenols it reduces the risk of cardiovascular diseases. Its high digestible fats have a beneficial effect on cholesterol and blood sugars levels. These extraordinary features are enhanced and valued by olive cold-pressing.
